HOW TO MAKE HEALTHY HOMEMADE OATMEAL BANANA PANCAKE

I first got to know about oatmeal banana pancake from my friend, I was staying with my friend at the time when she ordered a meal of oatmeal pancake made with banana, carrot as side and honey as syrup from a food vendor she found on Instagram. I had a taste of it and it tasted weird, we decided we were going to make ours, which actually came out better than what she got. From then, we have substituted to making our own homemade oatmeal banana pancake.

Oatmeal banana pancakes are a healthy, quick and easy, without flour and sugar-free, filling breakfast served with fresh fruit and can be made in minutes. The texture of the pancake is different from the regular pancake because this does have any raising agent. This recipe produces a great breakfast for those of us living the healthy lifestyle and if you love banana, you would love this recipe too.

HOMEMADE OATMEAL BANANA PANCAKE

Ingredients

  • 4 ripe banana
  • 2 eggs
  • 1 cup of white oats
  • ⅓ cup of water
HOMEMADE OATMEAL BANANA PANCAKE

Method

  1. To make this recipe in a food processor, put the oatmeal in a blender and blend to fine consistency, grind the oats until they become a flour. Add the eggs, banana and water in the blender and process to as smooth a mixture as you can get.
  2. Heat a non-stick pan over a medium heat and pour 1 teaspoon of oil, pour about 2 tablespoon of batter into the pan and cook for 1-2 minutes until the base sets and bubbles appear all over the top. Flip and cook the other side for 2 minutes. Repeat in batches, making sure the top looks dry before attempting the flip, or the centre will collapse.
  3. For the chocolate syrup, whisk the eggs whites and add 2 tablespoon of chocolate powder ( I used Milo Chocolate powder).
  4. Serve pancakes immediately with your favourite toppings or freeze in airtight container and reheat in the microwave when ready to serve. I used chocolate syrup I made and sliced banana for toppings.
